Yesterday we hiked the Cathance River Preserve in Topsham, Maine. Who knew a treasure like this was right in our back yard?! With over 230 acres of trails, riverfront, and an ecology center, this place was the perfect spot to get lost for hours (we did get lost).
Place the sifted pollen in an airtight container and add it to flour for pancakes or other baked goods for a lovely color. Wild Edible Foods says it makes a good thickener for soups too. Some research suggests it may have medicinal value as well so avoid using if you are pregnant.
Found some lovely blueberries, wood sorrel, and mint growing in the backyard. Plucked it and tossed it in the cuisinart with thyme, scallions, garlic, fresh lime juice, and a habanero pepper.
